Brunch Recipe

Here’s a recipe for an easy breakfast or brunch main course. You can cut it in half quite easily, too; just use an 8×8 dish instead.

Brunch Eggs California

2 cups fresh corn, approximately 2 ears (I used frozen corn, thawed)
2 tablespoons butter
12 eggs
1-1/2 cups sour cream
1/2 cup milk
4 cups shredded Cheddar cheese
8 ounces diced green chilies
1 tablespoon Worcestershire sauce
1 tablespoon salt
1 teaspoon pepper

Sour cream to serve
Chopped tomatoes to serve
Guacamole to serve
Salsa Fresca to serve

Preheat oven to 325 degrees.

Sauté corn in butter for 5 minutes or until just tender. Set aside to cool. Beat eggs. Add remaining ingredients and mix well. Add cooled corn and mix. Pour into an oiled 9 x 13-inch baking dish and bake for 1 hour 15 minutes or until firm and golden on top. Serve with sour cream, tomatoes, guacamole, and salsa.

Brindy Update

Brindy got some new medications to take and goes back for a recheck this coming Friday. We’re all hoping the eye is a least getting better or else she may have to have a little surgical procedure done. Meantime, she does, at least, seem to be less bothered by the eye.

Here is her latest interpretation of the command “Get in your bed”!

She is, after all, touching “her” bed.

Crafting Space

Generally, when I am making flowers, I do one variety at a time. This means my working space can be somewhat contained and I usually manage to scrounge out enough space in my office for whatever needs doing. However, this month I have been taking an on-line class that started out working on 5 flowers at once. That means 5 different kinds of petals, 5 different stamens, 5 different leaves, etc., etc. To make it more unwieldy, I didn’t make just 1 of each flower, I actually ended up with 3 tulips, 4 cosmos, 4 clematis, 8 cosmos, and 7 stems of sweet peas with 7 flowers per stem.

This amount of materials and equipment was just not capable of fitting in my little office space. So here’s what the kitchen/dining room counter has looked like for 2 weeks:

I finished up all the pieces yesterday and was able to get my counter space back. Today I hope to finally assemble the flowers.

Brindy, the Tool-Using Dog

Brindy continues to adjust to the cone she has to wear. She still catches it on things, but not to the extent that she did at first. It does make it difficult for her to tell where sounds are coming from, and she often goes trotting off in the opposite direction from which I’m calling her. And mom is still accumulating bruises on her legs from when Brindy walks into her with the cone.

But she has found one advantage. The dates she is so determined to find when we are out walking are no longer just sitting around to be easily grabbed. This is what lead her to poking around in the bushes in the first place, which is how I’m sure she hurt her eye. She has now figured out that if she buries the cone in the gravel and gives it a little flick, the gravel goes flying and new dates are uncovered. Sometimes she’s just too clever!

The Further Adventures of Cone Dog

Brindy came through her surgery with no problems yesterday. Here’s a description of the procedure:

Pets have an extra eyelid that lies inside the other two lids and is attached to the inside corner of the eye – known as the third eyelid. A third eyelid flap is performed by pulling this structure over the eyeball, and then holding it in place with a suture through the third eyelid and out through the skin lateral to the eye. 

At the end of three weeks, the stitches come out and the eye gets reevaluated. I have an appointment with an eye specialist if there is still a problem.

She is still on antibiotic pills and drops, pain meds, and some other pills and ointments. Fortunately, they are all on a 12-hour schedule, so I don’t have nearly as much to keep track of.

Meantime, she is definitely not a happy camper!
